(anne): lemon curd hand pies

today, i had the blissful experience of eating lemon curd by the spoonful….it was heaven….

i made lemon curd to fill the hand pies from kate mcdermott’s “art of the pie”.

a hand pie is basically a turnover that can be filled with just about anything your heart desires…mine desired sunny lemon curd to celebrate all the daffodils and magnolias that are blooming their little heads off…

curd is basically lemon juice and zest, sugar, butter, and eggs…it can be used in a pie, on shortbread cookies, on toast, or, as i have already admitted to, on a spoon!

the finished product…the crust turned out unbelievably flaky…yes, it is just the basic pie dough recipe!!!

 

do yourself a favor: whip up some lemon curd…go ahead and eat it by the spoonful and see if it doesn’t make you smile!
