(anne): eclairs

yesterday, i made the eclairs from dorie greenspan’s “baking chez moi”. oh. my. gosh.   they are super-duper!!! i started off with a home-made vanilla pastry cream.

first, i steeped a vanilla bean in milk…

 

and then progressed from there…

look at this beautiful vanilla”y” goodness!!!

the pate choux dough was next…

 

everything progressed quickly, which explains the lack of pictures!

the eclairs got baked to a dark golden brown…

the tops were sliced off to reveal the gorgeous craggy insides…

and then they were filled and covered in snowy powdered sugar…(it made me wish for christmas, as i was making it “snow” over the eclairs)…

and i’m signing off with lots of pictures, because they are worth a 1,000 words about how absolutely sublime these are!!!
