(anne): jam-sandwich cookies

the other day, i was rained-in (compliments of tropical storm hermine), and spent a leisurely day working, reading, knitting, and baking these delicious cookies from            dorie greenspan’s “baking chez moi”. the dough was soft and short-bread-like…

 

after the mixing, it was formed into a disk…

and then was rolled between parchment paper, until quite thin, and chilled, before cut into circles…

 

i used home-made strawberry jam (courtesy of my mother) for the filling…

the edge of each disk was lightly moistened to provide a seal for the top cookie…

(the jam is a bit runny…my mom made it without pectin…yes, on purpose!) 🙂

when they were finished baking, i took some up to my room and indulged in a pot of tea while i consumed them!

they are perfect with tea and seem very sturdy for a picnic or traveling…
