(anne): nutella buttons

yesterday, i made the nutella buttons from dorie greenspan’s “baking chez moi”…they were wonderful-beyond-words…

i started by buttering my mini muffin tins…

 

then cracked my eggs…separating the yolks from the whites…

 

i melted my butter…

 

and mixed together my dry ingredients…including the powdered sugar…

i lightly stirred my egg yolks with almond extract and vanilla…

i loved the interesting way this batter came together…it was unlike anything i’ve ever made before…first, the yolks were added to the dry ingredients to form a paste-like mixture…

 

then, the butter was added…

 

i whipped the egg whites until firm…

and then vigorously beat some of the whites into the batter…

 

and then folded in the rest of the whites…

 

now…it was time to fill my muffin tins…i put a small amount of batter in each compartment (i know, i’m really messy)…

and then put in a bit of my hazelnut/chocolate spread…i found an organic kind from italy that brought me to tears…it was that sublime…

 

and then filled the tins the rest of the way with batter…

they were so beautifully golden…

these were amazing…there was an option to glaze them, but i chose to leave them plain. they have a nice tight crumb, but are not dense. i think these would pack great in a picnic basket and i will most certainly be making them again, and again, and again!!!!!
