(anne): viennese sablés

first of all, many apologies for us having been so quiet the last couple of weeks. livi had a run-in with her pressure cooker while making strawberry jam and has been out of commission for a little bit.

last night, i made viennese sablés from dorie greenspan’s “baking chez moi”.

within 3 short hours……….they had completely vanished….we all agreed that they probably would’ve tasted great with coffee in the morning, but they didn’t last long enough for us to try it!

first of all, i lined my baking sheet with parchment paper…

this was the first recipe so far that used the stand mixer…

i dumped the butter into the mixer…

then the powdered sugar (which i made by grinding granulated sugar in my trusty coffee bean grinder)  and salt…

then creamed it all together…

then, i did something which departed drastically from dorie’s recipe…i was out of eggs and too lazy to run to the store, so i did what i always do when i’m making cookies and am out of eggs…i substitute 1 tablespoon of cornstarch for each egg and then add enough milk to make up for the egg liquid (i just eye ball that). btw, i would never use this substitute in anything but a basic cookie… i also gathered my dry ingredients…

i added the cornstarch…

 

and then the milk…

then the dry ingredients…

look at this lovely dough…

 

instead of piping the dough…i pinched off a little bit into my hand…

and then rolled it into a log…

 

and then formed the logs into ribbon shapes…

while they were all baking, i cleaned up…

they got all puffy and golden in the oven…

and they were taken off the sheet…

and put on a rack to cool…

i had mine with hot water with lemon and honey (my night time drink of choice)…

no, i didn’t eat all of those by myself!!!! 🙂

 

my sister had hers with herbal tea…

(she ate more than two!) 😉

they were delicious…and i wouldn’t hesitate to make them again…so easy and quick as well!!!
